Thomas Pico has been turning out elegant, considered Chablis since obtaining his first plot near Courgis in 2005. Under the tutelage of Chablis superstars Alice and Olivier de Moor, Thomas has established himself as as a devoted organic grower committed to sustainable practices both in the vineyard and in the cellar.
The 2017 Vent d'Ange shows green apple, marzipan and peach blossom. There is a luscious density and textural complexity to this wine that is aged for 14 months on lees in a combination of stainless steel, cement egg, and used barrique.
